Vegan Rainbow Toast
HEY!!!!!! A few months ago I went to First Watch, which is a restaurant in North Shore, Chatt. I ordered this super yummy dish called “rainbow toast.” I immediately started planning how I could recreate their recipe to make it vegan friendly. My version of rainbow toast has brioche bread topped with coconut whipped cream, fruit, and granola. ENJOY :)
(MAKES ABOUT 2 SLICES)
vegan brioche bread (toasted slices) *
1 can unsweetened full fat coconut milk (refrigerated for 24 hours)
2 tsp maple syrup
1/4 tsp vanilla extract
(toppings - OPTIONAL)
1 mango, strawberries, blueberries, and blackberries *
Make the vegan brioche toast. (you can also buy a regular brioche loaf where it is available, but this recipe will no longer be vegan if you do so). I recommend this recipe for the bread:
An electric mixing bowl is required to make the whipped cream. Place the metal bowl in the fridge for 1 hour prior to making the cream.
Remove the can of coconut milk and the mixing bowl from the fridge after both have chilled for the suggested times. Carefully scoop the solid coconut milk out of the can and into the mixing bowl. DO NOT USE THE EXCESS LIQUID. Beat the solid coconut milk on high for 7-10 minutes, or until a fluffy and thick texture is formed.
Add the maple syrup and vanilla. Beat for 1 more minute and then taste the mixture. Add more syrup if you want the cream to be sweeter.
Cut the brioche bread into 1 inch slices and then toast the pieces in a toaster until golden brown and crispy.
Chop the mango, strawberries, blueberries, and blackberries into their desired sizes. (I recommend small pieces)
Spread your desired amount of whipped cream onto the toast and arrange the fruit on top on. (strawberries - mango - blueberries - blackberries /// in order from top to bottom). Sprinkle granola on top of everything. Eat quickly before the whipped cream soaks into the toast.

granola * - I bought the almond vanilla granola from Whole Foods and forgot to put it on the toast :/…but feel free to use any type of granola that you want
