Peanut Butter Chocolate Covered Dates
HELLO! These are definitely my new favorite dessert! SO GOOD. They are really yummy, naturally sweet, and definitely addictive. It doesn’t take long to make these, and it is fairly simple too. ENJOY!
one 10 ounce bag vegan chocolate chips (I used Enjoy Life Semi-Sweet Vegan Chocolate Chips)
20 medjool dates
peanut butter (or any other nut butter)
crushed peanuts (optional)
Slice the dates in half (as pictured above) and take out their pits. Fill the slices with peanut butter. I recommend using a syringe to do this because knives are more difficult to use.Put the peanut butter filled, sliced dates back together.
Melt the chocolate chips in the microwave or on the stove. I microwaved them in 30 second intervals, stirring in-between each round, until they were completely melted.
Using a spoon or whatever utensil you would like, submerge the dates under the melted chocolate until they are fully covered. sprinkle the crushed peanuts onto the dates before they are dry. Place them in the fridge for 30 minutes before serving. Keep the dates refrigerated for up to 1-3 weeks.
